Good morning lovelies!
It's that time again, Peas & Crayons' What I Ate Wednesday! WIAW is about sharing food and having fun, breaking out of your same ol' routine with food and inspiring others to join you!
So without further ado:
Breakfast: Leftover pizza... I know, I know... but it was sooo good! Fresh mozzarella, roasted peppers, ricotta, tomato-basil, finished with fresh sliced prosciutto.
Lunch: Talk about an epic fail by the Campbell's company... I packed this Tuscan-Style Chicken & White Bean variety to bring to work, only to discover that the container is NOT microwave safe. Thankfully, I was able to scrounge up a bowl!
Snack: My go-to snack, a crisp apple and a cheese stick, accompanied by an afternoon pick-me-up cup of tea!
Dinner: I was home by my onesies last night as the hubby was at his company's holiday party... so I had the chance to get creative! He's a land-lover, so I decided on steamed mahi-mahi tacos topped with cabbage and a spicy sauce made from Greek yogurt and Sriracha, served on low-carb tortillas!
annnnnd, [unphotographed] a glass and a half of Yellow Tail Cabernet Sauvignon to top off the night while watching Biggest Loser!
Workouts: 2.4 mile walk at lunch, 1 mile run for the Runner's World RunStreak Challenge, Supreme 90 Shoulders & Arms DVD.
